Hand picked: why selective harvesting matters
On many of the best smallholder farms, cherries are hand picked at ripeness. That means under-ripe and over-ripe fruit stay out of the lot—so sweetness, acidity, and clarity in the cup are protected. Machine stripping harvests faster but mixes ripeness levels; for high quality coffee beans, selective picking is still a gold standard.
Processing: washed, natural, and beyond
After harvest, processing shapes the bean’s character. Washed (wet) processing often highlights clean acidity and terroir. Natural (dry) processing can add fruit-forward depth and body when done with care. Honey and other methods sit in between.
